Located in the historic village of Oatlands, Tasmania, Callington Mill Distillery blends world-class whisky making with stunning heritage architecture. Originally built in 1837, the site has been transformed into a state-of-the-art distillery, showcasing the best of Tasmanian innovation while preserving its colonial past. With a grain-to-glass philosophy and a focus on premium cask-strength releases, Callington Mill is quickly gaining recognition as a leader in Australian single malt whisky.

What Stood Out:

We were fortunate to take part in their Serendipity Blending Experience—an immersive and expertly guided session where we sampled five of their cask-strength single malts before crafting our own bespoke blend. We named it Allira’s Dream, and it’s a dram we’ll remember (and enjoy) for years to come.

Beyond the blending, we were treated to an incredible lunch featuring Moreton Bay Bugs, Twice Cooked Pork Belly, Pulled Lamb Ravioli and Chocolate Truffle Torte, and a spread that showcased the same level of detail and care found in their whisky. A private tour of the distillery allowed us to explore their production process up close—from the milling room to the stunning stills—and wrapped up with a generous tasting of their core range and some special releases. The hospitality was unmatched.

Tasting Highlights:

During my visit, I had the chance to sample some of their incredible whiskies:
• Allira’s Dream – our personal, custom-blended single malt
• Callington Mill Signature and limited release Range - All unique and enjoyed throughout the meal.
 • Quagmire – a peated favourite (which came home with us)

Each dram reflected the distillery’s commitment to craftsmanship, flavour, and the unique character of its Tasmanian setting.
