About the Host – Dan Woolley
Dan Woolley is the heart and hands behind Highwayman Whisky. With over a decade as one of Australia’s most well-known whisky ambassadors, Dan has travelled the globe, visited iconic distilleries, and refined his craft from Islay to Byron Bay.

In 2016, he began maturing his own whisky, and by 2020 launched Highwayman—a fiercely independent, small-batch brand now 50+ releases strong.
